Ten Steps to Perfect Pasta

I'm amazed at how often I get e-mail from a disgruntled home cook, lamenting the fact that, once again, a dish of pasta has turned into a culinary disaster. I hear stories of overcooked, undercooked, tasteless pasta that may also be stuck together, or otherwise inedible. In fact, I recently had the experience where I was shopping with a friend and I suggested that she buy some pasta. Her response was that it was too unpredictable to cook.

It needn't be that way. First of all, 90% of cooking is being there. That is, letting the telephone ring through to voice-mail; perhaps leaving guests in the living room sipping their Chardonnay and simply keeping your focus on the task at hand. And by being there-that is, tending the pasta-you'll be able to do the only test available to judge its doneness: to taste.

Those two tips alone will improve your pasta-cooking skills, but I offer here, ten little steps that, taken together, will guarantee a perfect dish of pasta every time. Follow these steps, and you'll prepare pasta that will consistently impress your family, your friends, and your harshest critic; you.

1. All pasta is not created equal. Choose a brand with a solid reputation in the marketplace. De Cecco and Barilla are two fine brands readily available in supermarkets.

2. Use a pot that's large enough to accommodate the pasta without crowding. For one pound of pasta, an eight-quart pot is good; a ten-quart pot is better. Pasta needs room to move freely as it cooks. At a minimum, use nothing smaller than a six-quart pot.

3. Use plenty of water. For one pound of pasta, you should use at least six quarts of water.

4. Add salt to the water. About 1 Tbs. per gallon. Salt adds flavor to the pasta that helps to create a well-seasoned dish. Often, a perfectly seasoned sauce will still taste like it needs "something" because the pasta is unseasoned.

5. Bring the water to a full, rolling boil before adding the pasta. One of the prime causes for pasta sticking together is that the water had not yet come to a full boil. When you add pasta to water that has not yet reached the boiling point, it releases natural starches, which act like glue. Since the pasta is simply sitting in the water at the time, the strands stick together.

6. Bring the water back to the boil as quickly as possible after adding the pasta. In the case of pasta strands, like spaghetti or linguine, stir the pasta until it has wilted and become submerged in the cooking water, then cover the pot until the water returns to the boil. When the water has boiled, though, uncover the pot, and finish cooking uncovered.

7. Stir the pasta two or three times throughout the cooking process. Pasta cooks in eight to ten minutes. The brief time you spend attending to it away from family or guests will reap huge rewards at the dinner table.

8. Never add olive oil to the pasta cooking water. The olive oil coats the pasta, and prevents sauce from adhering to it when you've put the entire dish together.

9. Cook the pasta to the 'al dente' state. The only way to judge this is by tasting. Manufacturer's cooking times are mere guidelines. Begin tasting the pasta about two minutes before the manufacturer says it should be done. Also, there will be a small amount of carryover cooking between the time you remove the pasta from the stove, drain in the sink, and combine with the sauce.

10. Never rinse pasta. When you rinse pasta, you're washing away most of the starches and nutrients that you were seeking to enjoy in the first place.

So be there. Be attentive. Taste, and learn when pasta has cooked to the consistency that you like. Follow these ten little steps, and you'll develop a reputation as a miracle worker with pasta. And with the myriad of sauces in the Italian and Italian-American cuisines, you will have expanded your cooking repertoire beyond your wildest dreams.

Smart and serious entrepreneurs know the importance of market research. They know that in order, for a home-based business to succeed, they have to research their target market (their potential customers) and study their competitors.

Research your target market and study your competitors in order to have a long-term, profitable home-based business.

Know what your customers want and give it to them. Keep an eye on your competitors, study their offer(s) and make sure you come up with a better deal than them.

Study each successful entrepreneur in your marketing field and you'll notice how they market online / offline.

Each of them have their own 'unique' marketing strategy but they use the same basic principles.

Don't re-invent the wheel. Use the main marketing concepts that are proven to work but try to improve and adjust them to your own situation. Make them work for your home-based business. Make your offer better and unique than your competitors if you want to WIN in this business, or simply quit (I know that's no what you really want!)

5. It's their investment that brings success

Smart entrepreneurs know that the KEY is to work SMART, not hard. If you don't have the required skills to develop a NEW marketing tactic for your home-based business why not hire a consultant who knows his stuff?

Low Carb Cookbook Review - 15-Minute Low-Carb Recipes by Dana Carpender

Busy, busy, busy. Today's schedules and fast paced, multi-tasking lifestyles make it difficult for most of us to find the time needed to prepare and serve balanced, nutritious and tasty meals. I am no exception. Since I tend to be a problem-solver by nature, I decided to gather a collection of quick, fast and easy low-carb recipes so I could save time in the kitchen but still stick to my low-carb lifestyle.

I expected it would take quite awhile to get enough recipes together to make a difference. However, thanks to Dana Carpender's newest low-carb cookbook my collection has grown overnight!

15-Minute Low-Carb Recipes by Dana Carpender (Fair Winds Press, 2003) gave my collection a huge boost. From the introduction, I found that the entire purpose of this book is to provide a cookbook filled with recipes that take a maximum of 15 minutes to make-and that includes prep time. Sound intriguing? I thought so, too.

This 253-page compendium offers more than just microwave or "tear open a protein bar" meals. These recipes were all timed and each was considered for health, feasibility and appropriateness to the book's theme. Dana's introduction explains her reasons, her processes, and offers detailed hints, tips and tricks to cut down prep time.

To give you an overview of the contents, there are thirteen chapters divided by food type, such as "15-Minute Eggs," "15-Minute Tortilla Tricks," "15-Minute Main Dish Salads," "15-Minute Skillet Suppers," and Chapter 12, "15-Minute Condiments, Sauces, Dressings, and Seasonings," which has my favorite homemade sugar-free ketchup recipe. Of course, I cannot forget to mention the last chapter, "15-Minute Desserts."

Written in an easy to follow, relaxed style, this book feels like an old friend for those of us who have come to know Dana's work from her 2002 cookbook, the very popular 500 Low-Carb Recipes. If you are not familiar with her previous book, I think you will be pleased with her comfortable, confidant style and helpful insights.

There seems to be recipes to suit most everyone, from low-carb soups to high-protein nuts. I especially appreciate that the recipes have short instructions, are very fast to read-and they are easy to make. A few I have tried and enjoyed include, "Houbyfest Eggs," "Blintzlets," "Parmesan Chicken Breasts," "Sour Cream Ham Supper," and "Cheater's Chowder." And, I am wrapping "Cinnamon Splenda® Nuts" in red plastic wrap tied with a thin velvet ribbon for Valentine's Day mini gifts. (I will wait until next month to tell the recipients the gift was sugar-free!)

How You Can Enjoy Golf Even During Bad Weather

Avid golfers would like to play the game as often as possible. They'd love to be able to play all the time if it was only reasonable to do so. And that means playing in every kind of weather condition there is. A person with true passion for the game of golf would certainly want to play through even the worst kind of weather, at least that's what every lover of the game would prefer.

To those golfers who would like to thoroughly enjoy the game even during bad weather, what they need is adequate protection from the elements. During the more extreme kinds of weather, the elements are particularly more harsh than usual. In order to cope with that, golfers - whatever skill level they may be - should be adequately prepared. A few tips about how they can be prepared to still enjoy the game would be nice to have on hand.

The following are some of those tips that can help with the continued enjoyment of playing golf even in cases of bad weather.

Always be sure that you have adequate waterproof clothing with you. This type of clothing should not only protect you from the elements, but is also light, breathable, and offers a tremendous amount of comfort. So you wouldn't feel hampered with your movements at all. And this type of clothing is also constantly being updated, so you could expect even better waterproof clothing in the coming days. Wear the proper golf shoes, which in this are waterproof golf shoes. It would be extremely uncomfortable to walk around, much less play, in shoes that are already soaking wet. That makes wearing waterproof shoes doubly important. Also remember to bring along an extra pair pf socks, just in case you'd need to use it because your original socks got wet. Having a golf umbrella would also be quite handy. With the modern version being larger and having an overlapping layer tat allows for the wind to blow right through - preventing your umbrella to blow from the inside out, this is a very good thing to have when golfing during rainy days or other instances of extreme weather. A golf towel should be added to the stuff that you're bringing to the golf course. Select a really towel and it would do for the purpose that you have for it. In order to be effective, you need to keep it dry though. You are going to need to keep your hands as dry as possible, and also to keep the grips of your golf clubs clean and dry. Choose a good hat to wear. To keep water from getting in your face and distracting you from the game and in making even the most basic movements, you need one of those waterproof hats that are also wide brimmed. Make sure that your golf clubs are adequately protected by using a hood that's specially made for golf bags. A hood that's designed properly will make sure that no moisture will penetrate and wet the golf club grips and shafts.

Sailing Beginner - Launching Your Sailing Boat

In this sailing beginner article, I'd like to explain how to launch the sailboat from the boat trailer step by step. The first thing I do when I arrive at the boat ramp is to check to see if anyone is currently using it. If no one is, I turn the tow vehicle around so that I'm in position to back down the boat ramp. However, before actually backing down on the ramp, I perform the following preliminary steps while still on a dry flat surface. Or if someone is currently using the boat ramp, I will proceed with these same steps while in the parking lot. And once the boat ramp is available, and I completed a few preliminary steps first, I will back down and put it in the water. Here's what you need to do first.

I take off the safety chain at the bow, and then I go to the back of the boat and remove the nylon strap. In this way, the sailboat will be able to float off the trailer and separate from it once it's submerged.

Tip: Here's a little tip that will save you money and time. Make sure to disconnect the trailer wire from the tow vehicle before you back the trailer into the water. This will avoid burning out light bulbs unnecessarily. The reason that a bulb may burn out is when backing down the ramp, your foot will be constantly on the brake and as a result the boat trailer brake lights are getting hot. But once submerged, they will get even hotter and can easily short out at this point. Trust me, I know this works, because one day while launching my sailboat I forgot to disconnect the trailer lights and burned out one of the bulbs instantly. Try this next time you launch, I think you will be pleasantly surprised.

Next, I attach a 25-foot piece of nylon rope to the bow of the sailboat. Then I point the side mirrors on my tow vehicle down, so that I can see the boat ramp while backing down it. This prevents me from driving off the ramp, as you cannot see the boat trailer at this point to use as a reference. Once the trailer is completely submerged, I put the vehicle in park along with the parking brake. And then I proceed to release the sailing boat off the trailer by slowly cranking the winch handle out until the boat is now free from the trailer.

Tip: A word of caution is merited here, please be careful to keep clear of the boat winch handle especially when the winch is under tension by the weight of the sailboat. My Renken 18 foot sailing boat weighs over 1,200 pounds and creates a lot of tension especially when it's on the incline of a boat ramp. One day I accidentally released the winch while being distracted and the handle just about knocked my two front teeth out! Thankfully my dentist was just up the street and I had to make an emergency appointment. Don't let this happen to you! If you are going to quick release the sailboat, make sure you position the handle in a neutral position first to avoid any personal injury to yourself.

I prefer to release the sailboat a little at a time after that accident, by turning the winch handle slowly a little at a time, making sure to keep my body clear of it, until I can unhook the winch strap from the bow. Then I gently push the sailboat off the trailer with both hands, then I grab the 25foot rope mentioned earlier so I don't have to go swimming for it, and tie it up to the dock by controlling it with the rope. There you have it, with these few steps and words of caution will enable you to launch your sailboat for the first time. Until my next article - Happy Sailing!
